from last months lesson on how to make yummy…
Cinnamon Buns
By Shyrl Cullum
Put following ingredients in mixer - beating after each addition
2 eggs
1/3 cup sugar
4 Tbs. powdered milk dissolved in 1 1/2 cups hot water
½ cup margarine - melted (one square)
1 Tbs. yeast - Fleischmann's Quick-Rise
4 cups flour - add one cup at a time
1 ½ tsp salt
Approx. 7/8 cup of Cake and Pastry flour plus enough corn starch to equal one cup
* I start with the paddle attachment and change to the dough hook after adding the 3rd cup of flour
Beat with the dough hook until dough comes away from the bowl and forms a ball
Put dough in greased covered bowl and let rise until double
Roll out dough on floured counter approx. 18" x 12". Cover with ½ lb. (one cup) softened margarine.
Cover margarine evenly with 1 ½ cups cinnamon sugar -
(To make cinnamon sugar add one cup of cinnamon to four cups brown sugar)
*Leave about ½" at bottom of dough for a light brushing of water to make rolls stick together.
Roll from top to bottom as tightly as you can - brush bottom strip with water and let sit for a few minutes to let the
water act as glue to hold the roll together. Cut into 12 rolls and put in parchment lined pan until double. Bake approx. 25 min. @ 375 deg.
Immediately cover with cream cheese icing.
Icing Recipe
Cream together one pkg. (250 gms) cream cheese and ½ cup butter + 2 Tbs. milk
Add 3 cups icing sugar - one cup at a time - beat until fluffy
Add 2 tsp. white vanilla
